I’ve sold my stuff, rented out my apartment, bought a truck, and hitched up a 27-foot Air stream Globetrotter that’s shinier than a Beverly Hills facelift. I’m setting off to visit every state in the U.S, again, in search of steak that transcends.

I’m not just looking for the juiciest cut or the perfect sear. I’m chasing the steak experience; the kind that stays with you, that tells you something about place, people, and time. The kind that, just for a moment, makes everything else fade out.

Call it what you like: an adventure, an obsession, a pilgrimage with grill marks. Whatever it is, it’s a slow-burn love letter to the American steakhouse.

This isn’t a food blogger’s checklist. It’s not about what’s trending or plated with foam. It’s about wood-fired grills and white tablecloths. Tin trays and ranch-raised cattle. The places, old-school icons and new-wave upstarts, that treat steak not as a dish, but as a craft, a ritual, a story.
